From the kitchen of Dr. Jackie Gardner-Nix
My husband is going for cataract surgery; he has a bit of early macular degeneration, and we both suffer from dry eyes. Too much computer work for me, and aging!
So, my optometrist spurred us into action with our diet to help. Eye health has become front and centre. My husband has never eaten so many blueberries!
There is good evidence to show that dietary measures can help our eyes. Aside from using lubricant eye drops with no preservative a few times daily now we are hitting antioxidant-rich and omega-3-rich foods.
3/4 cup frozen wild blueberries (antioxidants)
1 kiwi fruit, chopped (antioxidants)
2 teaspoons chia seeds (Omega-3s)
1 tablespoon ground flax seed (Omega-3s)
2 tablespoons walnuts (Omega-3s)
1 tablespoon maple syrup, or to taste
1 1/4 cup oat milk, less or more to adjust thickness
Blend in a blender. Enjoy!
